PreK Activity Day -- Numbers!

Working with numbers this week!
Parker is working on 1:1 correspendence up to 10 and beyond.  Got these free printables from

Recipe -- Spinach Cupcakes

I love trying to find was to incorporate vegetables into snacks and other meals to make them, well... appetizing.  I want us as a family to make better food choices, and I want Parker to grow up eating nutritious food... So, I was on one of my favorite food websites,, and found these spinach cupcakes.  And actually, they turned out really good!

Here is the recipe:

1/2 Cup Unsweetened Applesauce
1 Large Egg
2 Tsp Vanilla Extract
1 Cup Fresh Spinach, packed
1/3 Cup Sugar
2 Tbsp Vegetable or Canola Oil
1 1/2 Cups All Purpose Flour
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Tsp Salt
1. Preheat oven to 350 F.
2. Place the first 6 ingredients in a food processor and puree.
3. Place the remaining ingredients in a separate bowl and combine.
4. Pour the spinach puree in a large mixing bowl.
5. Slowly mix the dry ingredients into the wet until combined.
6. Scoop batter into a greased mini muffin tin, filling each cup 2/3 of the way.
7. Bake for 12 minutes.
8. Serve.

After they were done, I mixed powdered sugar and water and drizzled them over the finished product, which them just sweet enough!  Let me know if you tried this!

PreK Activity Day -- Cheerio Bracelets

So, this is an activity that I did with Parker so he wouldn't ask me to play MarioKart for the 10th time! I got some pipe cleaners and Cheerios and let Parker string them on the pipe cleaner and then made them into bracelets...

Easy, focuses on fine motor skills, and Fun to eat!

Motherhood will teach you a lot.  A lot.  Lately, I have noticed that I would like to make all of Parker's choices for him because, of course, I know better.  I can see beyond his choice. Do I make any sense?  For example, lets take friendship.  My son is a delightful, funny, sweet friend.  But my son seems to have some difficulty in this area.  He has a couple of good friends, but doesn't see the need to reach out and get to know a lot of other children. I know how happy he would be if he would just play with other kids more, or want their companionship more...  But I also know that, #1, you can't reason to that extent with a 3 year old... and #2, you can't make these choices for him.  All you can do is lead by example, encourage him to do the right things, sit and wait. The things I know that are good for him maybe are not the things he is going to choose... and that kills me!

For some reason that has been on my mind a lot, and perhaps now I know why.  I have made a correlation between what I feel about Parker and what God must feel about us.  I mean, God can see in our future, he MADE our future. I bet He is looking down on us from Heaven, watching us make bad choices or missing opportunities He has given us, and screaming...  "Listen to me!  I know the best choice for you!" But again and again we choose not to listen or ignore Him completely.  I bet He is frustrated with us daily!  How silly are we not to listen to what choices God wants us to make?  He knows better than us... always.
